Roasted Sweet Potatoes

 

I grew up eating baked sweet potatoes. Betty would bake them whole and in their peeling in the oven and serve as a side with dinner. I’d cut one in half, stick a large pat of margarine inside, stir it around with my fork until it melted, then squish it into my mouth like ice cream on a cone.

It may have been grossly uncouth, but it was delicious. And, this was in the 60s when we thought margarine was good for you. Also, only rich people got real butter. Or so my little pea-brained mind thought.

This new wonder food has been around awhile.

My guy hated sweet potatoes so I just didn’t buy them. Until he had this idea . . . it was never my idea to be healthy . . . it was all his. But, he decided he wanted to eat them.

WANTED!! to eat them. Wanted me to buy them. To actually cook them. He discovered they’re good. He discovered they’re great!

Sweet potato chips. (I got to buy a mandoline. Best thing ever to make slivery chips– of anything. Even the tip of your finger.) Roasted. Grilled. Mashed. Shredded. Sautéed. Diced. Stir-fried.

Which brings me to the following recipe. Roasted is by far one of our favorites. Quick and only a few ingredients. Best of all? It’s easy.

 

Barefoot’s Roasted Sweet Potatoes

1 Sweet potato — medium size per person (plus 1 or 2 for the pot, if a crowd)
1 Onion — chopped per 3 potatoes
Butter — diced, 6 tablespoons for 3 potatoes, adjust for quantity
Salt & Pepper, to taste
Red pepper flakes, if you like a little heat

Directions:

Heat oven to 350o. Spread the chopped potatoes and onions in a baking dish or sheet pan, sprinkle on salt, pepper and pats of butter. Sprinkle red pepper flakes, if using.

 

Roasted Sweet Potatoes

 

Place in oven uncovered. Stir around in pan several times during cooking and as butter melts so everything gets coated with butter & seasonings. Bake until just crispy on the outside, tender on the inside– about 35-60 minutes depending on amount of potatoes. If you want more crispiness, broil a few minutes when finished baking.
